In the first part of our monthly series called the Sunday Selection, we cast the spotlight on one of our home-bakes that has been a dark horse. While it may look simple next to our Warm Lemon Lavender Cake or Tokyo Yuzu Cheesecake, the Rich Cognac Chocolate Ganache Cake is seductive, wonderfully rich in its chocolate-y flavour, and playful with that hit of booze.
Chocolate and alcohol often find themselves in a simple yet beautiful relationship—from our days in Creamier, we’ve paired brandy with chocolate and cherries in our ever popular Black Forest ice cream; and also rum with chocolate and nuts in the Richest Dark Chocolate Ferrero. The two go hand-in-hand, so it was just a matter of picking the right alcohol to spike the ganache for this luscious creation. With the rich, smooth dark chocolate ganache, the finest of the spirits was our go-to choice: cognac.
